Easy Entertaining… Panko Crusted Pork Tenderloin with Mustard & Horseradish

Here’s an easy and impressive pork tenderloin recipe that is simple enough for weeknight entertaining… or a lovely dinner with the hubby and kids.  The combination of the Garlic Mustard and Horseradish in this pork dish adds nice punch of flavor.  I like to serve it with a horseradish cream sauce for extra zip.

Panko Crusted Pork Tenderloin with Mustard & Horseradish

1 pork tenderloin (2 pieces)

½ cup Terrapin Ridge Farms Creamy Garlic Mustard*

½ cup drained prepared horseradish

1 cup Panko (I used Ian’s Gluten-Free Panko)

Salt & Pepper to taste

2 Tablespoons of Olive Oil

Mix: In a bowl, mix together the mustard & horseradish.   In a flat pan or baking dish, mix the panko with the salt and pepper

Assemble & Bake: Preheat oven to 400°.  Lightly coat the base of a 9” x 13” baking pan with olive oil or olive oil spray.  Rinse and pat dry pork tenderloins.  Generously brush each tenderloin with the mustard-horseradish mixture.  Dredge tenderloins in the panko and place in baking pan.  (Feel free to sprinkle addition panko on top of tenderloin is there are bare spots).  Lightly drizzle olive oil over the top.  Bake for about 30 mins or until the internal temp reaches at least 145°.

Let rest for 10 mins.  Slice, serve and enjoy!

Serving tip… Horseradish cream sauce is delicious served alongside this dish.

Our Home Studio Remodel is Complete!

This was a great weekend for the Graham’s as we have finally finished our home studio remodel!  This project took us a while as it kept getting put on the back burner due to other commitments and projects, but this weekend we were able to put the finishing touch on this remodel… hanging the beautiful reclaimed freight elevators doors we found in Ithaca, New York.

The doors needed some TLC, but they were just what I had envisioned for the entrance to my home studio and workroom.

They are made of chestnut and once we cleaned them up with mineral spirits, the color was truly stunning.

Structurally, they needed a bit of work, but my husband did a great job tightening them up and repairing some of the damaged boards.  The visible dents and dings are just part of the charm and character of these unique vintage doors.

Our Favorite Things… Blends by Orly Gluten Free Flour Blends

Orly’s recipe for Coffeecake Muffins… delicious!  Nobody would guess these were gluten free.

Orly’s Gluten Free Coffee Cake Crumb Muffins

Cake:

1 2/3 cups (215 grams) Sydney Blend
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (113 grams) unsalted butter, softened
1 cup (200 grams) granulated white sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup (180 ml) sour cream or plain yogurt (I used greek yogurt)

Crumb Topping:
1 tablespoon cinnamon
1 1/2 cups (200 grams) Sydney Blend
1 1/3 (215 grams) white granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (210 gram) melted butter

 

Preheat oven to 350 degrees F (180 degrees C). Line a 12-cup muffin tin with paper cups.

Mix: Mix together the Sydney Blend, sugar, cinnamon, baking powder, baking soda and salt.   Then add the melted butter and use your hands to rub the butter into the dry mixture.  Mix all ingredients together until the texture is crumbly.  In the bowl of your stand mixer with the paddle attachment, beat the butter until softened (about 1 minute). Gradually add the sugar and cream together until light and fluffy (about 3-4 minutes). Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl as needed. Beat in the vanilla extract. In a separate bowl whisk together the flour, baking powder, baking soda, and salt. With the mixer on low, add the flour mixture and sour cream alternately, starting and ending with the flour. Mix until fully incorporated.

Bake: Spoon or pipe the batter to fill ¾ of the muffin cups.  Fill the rest of the cups with the crumb topping on top of the batter. Bake for about 20-25 minutes, or until a toothpick inserted into the middle of the cake comes out clean.

I have a weakness for pottery… all kids of pottery and dinnerware.  Although, I carry a variety of patterns in my store,  I always find a pattern or piece that catches my eye on vacation.  I have been known to carry large pottery platters and bowls  through the airport and in my carry-on bags to protect my new found purchases.

The challenge with pottery is that it’s fragile, and as a mother of three boys, I’ve lost my pieces of pottery due to breakage.  However, I am a very firm believer of using your dinnerware and glassware – everyday and any day!

Succulents are quite popular right now, and it’s no surprise as they are one of the most versatile plant options for decorating both inside and outside the home.

Easy Entertaining… Balsamic & Bacon Braised Pork Chops

Crema Balsamica plays a starring role in this impressive braised pork chop dish. Paired with delicious bacon, this sauce reduces to a luscious glaze that’s elegant, but easy to prepare.

Perfect for a quick weeknight dinner, but also worthy of serving to guests. This was a big hit at my house – especially for my husband, who is a huge pork chop fan.

Balsamic and Bacon Braised Pork Chops

· 4 bone-in pork chops (about 1 inch thick)
· Sea salt and freshly ground pepper, to taste
· 1 Tbs. olive oil
· 4 bacon, chop into thin slices (lardons)
· 1 red onion, sliced
· 1 garlic clove, minced
· 1 Tbs. firmly packed dark brown sugar
· 1/2 cup balsamic vinegar
· 1 1/2 tsp. dried thyme
· 1 cup low-sodium chicken broth

Season the pork chops with salt and pepper. Heat pan and add olive oil. Brown pork chops in pan on each side – about 3-4 minutes per side. Transfer to a plate.

In the same pan over medium heat, cook the bacon until crispy, 5 to 8 minutes. Reduce heat to medium-low and add the onions, cook until soft about 8 minutes. Add the garlic and cook for another 1 minutes. Drain excess fat, leaving about a tablespoon or so in the pan.

Stir in the brown sugar, balsamic vinegar reduction, and thyme. Increase the heat to medium and cook until the liquid is thickened and reduced by half, 10 to 12 minutes. Stir in the broth and bring sauce to a simmer.

Return the pork chops to the pan. Cook, covered for about about 5 minutes and then uncovered for another 7-8 minutes.

Serve with mashed potatoes, rice or ramen rice noodles and a side of steamed or sautéed green beans.
