Pantry Perfect Chocolate Pudding

As with many businesses across the country, we’ve made changes to how we are operating our Home and Lifestyle Boutique, à la Maison, and our design services.  For the health and safety of our store customers and design clients, we have closed our store and postponed design appointments for a few weeks – and that could be extended depending on how the Coronavirus progresses.

I am blessed to spend much of my time helping customers and clients create beautiful spaces within their homes… working with them to design their personal haven.

As we all practice Social Distancing, now it’s time to focus more energy on life at home and how to nuture, entertain and feed our families.   I’ve decide to allocate some time highlighting a few family entertaining tips and some of my favorites recipes that include ingredients you probably have right in your own pantry.

Starting with something fun that even the kids can get involved with – Quick & Easy Chocolate Pudding.

This recipes is one I make quite often using almond milk instead of diary, but today I went with 1% diary milk as I had more of that in the refrigerator.  You’ll notice that I recommend adding a small amount of coffee extract – only if you have it in the pantry.  The recipe is delicious either with our without the coffee extract.  If you have it, it amps up the chocolate a notch.

Gluten-Free Goodies… GF Frosted Chocolate Donuts

This is going to be a quick one!… I thought I had posted these donuts the last time I made them, but alas – I did not.  It’s a great (and pretty healthy) recipe to have handy for easy entertaining for those with gluten sensitivities.  Quite honestly, gluten sensitive or not, they satisfy a chocolate craving for anybody.

So here is the recipe for those who requested it.

GF Chocolate Donuts

Chocolate Frosted Gluten-Free Donuts
 
1 cup       Multi-Grain GF Flour Blend*
1/2 cup    GF Oat Flour
1/2 cup    Almond Flour
1/2 cup    Unsweetened Cocoa Powder
1/4 cup    Ground Flaxseed
2 tsp        Baking Powder
1 tsp        Baking Soda
1/4 rsp     Sea Salt
1 1/2 cup Unsweetened Almond Milk
1/2 cup    Pure Maple Syrup
1/3 cup    Grape Seed Oil
1/2 cup    Choco chips (semi-sweet, dark or mini)
Preheat oven to 350 degrees.  Mist donut baking pan with cooking spray.  In a large bowl, whisk together all the dry ingredients (Flours through to the salt).  In a medium bowl, whisk together the wet ingredients (Milk through Grape Seed Oil).
Slowly add the wet ingredients to the dry and whisk until combined.  Fold in the chocolate chips.
Carefully fill the donut pan with batter.  Bake 18 minutes or until a toothpick comes out clean when inserted.  Set aside to cool for 15 minutes.  Remove donuts to a cooling rack to cool to room temperature… then frost if desired.
Chocolate Frosting
(This is a small batch of frosting to drizzle or spread on donuts)
2 tbls    Butter or Coconut Oil  ( I usually use real butter – I figure to donuts are pretty healthy)
1 cup    Unsweetened Cocoa Powder
2 tbls    Almond Milk (or milk of your choice
1/2 tsp  Vanilla Extract
Whip or whisk together.  Add additional milk to loosen to desired consistency (I usually do a teaspoon at time so it doesn’t get too runny).
Drizzle, sprinkle…Enjoy!

Gooey Peanut Butter Bars… an almost guilt-free treat!

I’ve been trying to behave, eat healthy and tame my sweet tooth, but I had a craving for chocolate and peanut butter so it was time to whip up a batch of these Gooey Peanut Butter bars.

With a relatively small amount of sugar and no grain flour, these come at about 17 grams of carbs and a good dose of healthy fats – thanks to the almond flour, coconut flour and flaxseed.  You could use stevia or your choice of sweetener to drop the carbs down to about 7 grams, I just personally prefer natural sugar if I’m doing to indulge.

I can attest that these will cure your peanut butter & chocolate craving.  I couldn’t wait to try them… and as I was enjoying my peanut butter chocolate moment, I realized I hadn’t taken the photo!

Refreshing Gluten Free Lemon Bars

These gluten-free lemons bars are so refreshing and a delicious addition to your spring dinner or party menu.  I’ve made them gluten-free but you can easily change the flour to regular AP flour if you choose.

Gluten Free Lemon Bars 

Crust

  • ¾  cup Almond Flour
  • ¾  Blends by Orly Gluten Free Flour Blend* (London Blend) or your favorite Gluten Free AP Flour
  • 1/2 cup granulated sugar
  • 1/2 cup cold salted butter, cut into pieces
  • 1 tablespoons water

 Filling

  • 1 cups sugar
  • 1/2 cup fresh lemon juice
  • Zest of one lemon
  • 4 eggs, lightly beaten
  • 1/4 cup Brown Rice Flour or Blends by Orly Flour Blend

Heat Oven to 350F. Line a 9×9 baking dish with parchment paper and lightly spray with nonstick spray.

In a medium bowl, combine flour and sugar. Using a pastry blender or two butter knives, blend until a crumbly mixture results. Add water one tablespoon of water.  Press mixture into the bottom of the baking dished ensuring that you go up the sides of the pan slightly (this will help hold the lemon mixture).  Bake for approximately 25 minutes until slightly golden and set.

 In a mixing bowl, using an electric mixer, blend the sugar lemon juice, lemon zest together.  Beat in the eggs until smooth.  Pour mixture over the hot crust.

Bake 24-26 minutes or until set in the middle. Let cool on the counter and then refrigerate for a couple of hours.

To serve, cut into squares and sprinkle with powdered sugar.

Store leftovers in the refrigerator… Enjoy!
