Lillie’s Q Barbecue is great for grilling and roasting, of course, but don’t limit that amazing flavor to the grill. It’s delicious paired with some Bourbon Smoked Paprika in my Smokey Sante Fe Chicken Stew!

With minimal effort, you’ll have a rich and satisfying dinner that tastes like it’s been on the stove for hours.
Smokey Santé Fe Chicken Stew
2 tsp Grapeseed* or Olive Oil*
7 Strips of Bacon, chopped
1 1 large Onion, chopped
1.5 lbs Boneless/Skinless Chicken Thighs
1 Tbls Bourbon Barrell Foods Bourbon Smoked Paprika*
2 cans 14 oz. Diced Tomatoes (with or without green chilies)
1 cup Lillie’s Q Carolina or Smoky Barbeque Sauce*
1 Tbls Oregano
2 cans Pinto Beans, drained & rinsed

Sauté bacon and onion in oil, about 5-6mins. Move bacon and onion to a bowl. Then brown the chicken thighs (about 3 minutes per side). Add the bacon and onion back to the pan and stir in the bourbon smoked paprika. Stir in the 2 cans of diced tomatoes and the barbeque sauce. Add in the oregano. Bring to a slow boil, then reduce heat to low, cover and cook for 30 minutes.
Season with salt & pepper to taste. Add in the 2 cans of pinto beans, then cook uncovered for an additional 20 minutes.
Serving suggestion: Serve with shredded cheese and a side corn bread
