Spiralized Sweet Potato Salad

Salad:
2 Sweet Potatoes, raw, peeled & spiralized
1/2 cup chopped pecans
1/2 cup dried cranberries
2/3 cup baby spinach – rolled and sliced thin

2 oz crumbled goat cheese – optional

Dressing:
2 Tbls white wine vinegar
1 Tbls fresh lemon juice
1 teaspoon honey
3 Tbls extra virgin olive oil
Borsari sea salt and pepper to taste

Combine all salad ingredients then toss with vinaigrette. Sprinkle with goat cheese. Enjoy!
