With Labor Day Weekend here, and several picnics on our schedule, I thought it was a great time to mix up my all-time favorite Southern Living sugar cookies, which can be dressed up or dressed down…depending upon the occasion:
Sugar Cookie Base
1 cup butter, softened
1 cup confectioner’s sugar
1 cup granulated sugar
¾ cup canola oil
2 teaspoons vanilla
2 tablespoons fresh lemon juice
51/2 cups of flour
1 teaspoon cream of tartar
1 teaspoon baking soda
½ teaspoon salt
Then get creative with any of the following:
• Cookie sprinkles
• Colored sugar crystals
• Mini m&m’s (one of my favorites!)
• Mini choco chips
• Your favorite jam (I’m Stonewall Kitchen Cherry Berry Jam & Chocolate Strawberry Jam)
• Sliced Almonds
• The list is endless….
Beat butter and sugars together, then add in eggs, oil, vanilla and lemon juice. Gradually add in flour and next three ingredients – mix until blended.
Form 1-inch balls (I use a small ice cream scoop for speed). Then decorate – either roll the top of them in sprinkles; press in m&m/mini chips; or make an indentation in the top and place a dollop of jam and top with sliced almonds – delicious!
Bake at 350 degrees for 9 to 11 minutes. Cool on wired rack.
Result: 6-7 dozen cookies to enjoy!
